As I sit waiting to head out for the holiday weekend, I wanted to take minute to share my gratitude. This past year has held its share of tribulation, however, it has also held some incredible successes. From closing some really difficult deals which showed myself how capable I am in business, to seeing my son excel at soccer and receive the humble award at the end of the season which proved my parenting efforts a success, and to finding faith again which is leading me to a place of meaning and light, I am grateful. I also feel an imense amount of gratitude that I am able to spend the next several days with the some of the people I cherish most- my family- who has continued to gather for holidays, celebrations, losses and everything in between. I truly hope you too find happiness and gratitude in this season.
Okay, let's lighten things up a bit, with a quick recipe that I plan to make for that wonderful family of mine, tomorrow. In case you need a last minute side dish, this would be perfect. It combines a friend of mine's recipe with a couple of tasty tweaks. Pictures to be added when I actually cook tomorrow!
Sweet and Spicy Brussels with Butternut Squash and Bacon
Ingredients:
3 cups fresh brussel sprouts
1 small butternut squash
1/2 lb bacon
1 Tbsp hot honey
Directions:
Line a rimmed baking sheet with foil and lay a single layer of bacon. Place in cold oven and then turn on the heat to 425 degrees. Cook for 17-20 minutes or until bacon is cooked through and crispy (be careful not to burn!). While cooking, rinse your brussels and then half them, set aside. Peel your butternut squash, cut in half longwise, scoop out the guts and seeds, and then cut into 2 inch cubes, set aside. Transfer bacon to a paper towel lined baking sheet. If more than 2 Tbsps of bacon grease is on the baking sheet, drain some off, then coat the brussels and squash in grease and season with salt and pepper. Roast in preheated oven for 20-25 minutes or until tender and golden. As soon as you remove the pan from the oven, place warm veggies in a serving bowl and coat with hot honey, serve.
